These muffins could not be simpler to make, but you do need a high-powered blender. Simply throw everything but the berries into the blender, blend and voila, batter complete.

If you don’t have a blender, you can substitute the same weight of oats and flax seeds with oat flour and ground flax seeds/flax meal and turn it into a regular one-bowl muffin recipe.

A Zero Sugar Blender Muffin Recipe that tastes like a muffin

My coach has been doubling down on us to cut out sugar. “Sugar makes you slow and sleepy.”

Regardless of your reasons for avoiding sugar, these muffins are designed to work without them. In baking, sugar is used as a caramelizing agent and helps with moistness and texture. This means that sugarless baked goods can often end up dry and pale.

Unlike other blender muffin recipes which sometimes have a dense crumb and a pale crust, the addition of oil and flax seeds coupled with the high baking temperature gives these muffins height and a muffin-like texture. The liberal ratio of berries to batter also help with moistness.

These muffins have zero added sugar or sweetener and so are NOT sweet! Think of them as a cross between blended baked oatmeal and oatmeal muffins. I think that the bursts of fruit is enough for sweetness, but you can also have them with a sweet spread, or add 1-2 tablespoons sweetener of choice when blending the batter.

Ingredient Notes, Adaptations and Substitutions

  • Oatmeal: Any type of oatmeal – quick oats, large flakes, Scottish oats etc. Don’t use oatmeal that is preflavored. Make sure to use oatmeal or rolled oats instead of steel cut oats.
  • Milk: buttermilk will give the best texture and flavor, but any milk will work. You can also add one tsp vinegar to regular milk to achieve a buttermilk substitute.
  • Frozen berries: Frozen berries like blueberries, cranberries, and raspberries (or a mix of the above) will work best. Fresh berries may be liable to float to the top of the batter instead of even distribution throughout the muffins. You can substitute with other fruits, but make sure they are not too chunky (e.g. don’t use frozen mango chunks).   • Cinnamon: Easily modify to incorporate your favorite spices. My go-to muffin spice mix is cinnamon and nutmeg with a ratio of 2:1 (i.e. ¼ tsp cinnamon and 1/8 tsp nutmeg).
  • Oil: Canola, sunflower, olive, rapeseed – any liquid oil will work.

Equipment

  • 1 standard muffin tin
  • 1 high powered blender

Ingredients

  • 120 g oatmeal
  • 15 g flax seeds
  • 150 g buttermilk milk, or plant milk
  • 20 g oil
  • 1 egg 50 g
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • Pinch salt
  • 1/8 tsp cinnamon or more to taste
  • 150 g frozen berries blueberries, cranberries, raspberries

Instructions

  • Preheat oven to 425 degrees F. Prepare a muffin tin by lining or greasing the tin.
  • Add all ingredients except for frozen berries to a high-powered blender. Blend until completely smooth, around 1 minute. It may help to start at low speed and then increase to medium – appliances vary. The batter should be very smooth. Some flakes of flax seeds are okay, but make sure that the oats are completely pulverized and blended into a smooth batter.
  • Add the frozen berries to the batter and fold to distribute evenly. You can do this directly in the blender cup, or pour out the batter and combine the berries in a mixing bowl.
  • Divide the batter into the prepared muffin tins. This recipe makes 6 standard sized muffins or 3 jumbo sized muffins.
  • Bake at 425 F for 20-25 minutes or until muffins are golden and skewer inserted into center comes out clean. Baking time for jumbo size muffins may vary.
