Bran & Prune Muffins (Vegan)

This vegan muffin recipe is packed full of fibre from wheat bran and prunes. They are so moist and taste even better the next day!

Ingredients

  • 50 g wheat bran
  • 160 g soy milk or other milk
  • 40 g brown sugar
  • 35 g molasses
  • 20 g oil
  • 140 g dried prunes
  • 80 g boiling or hot water
  • 125 g spelt or whole wheat flour
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • In a mixing bowl, combine wheat bran and milk. Mix then sit aside.
  • In a heatproof bowl, combine dried prunes and hot water. Let stand for a couple of minutes, then snip the prunes with kitchen scissors into small pieces (see notes).
  • Add oil, salt, and cinnamon to the bran mixture. Mix to combine, then add flour, baking powder and baking soda.
  • By this time, the prunes should have thickened into a paste. If the prune mixture is still watery, microwave for 30 seconds and let cool slightly before use.
  • Combine bran mixture, prune mixture, and molasses. Mix to combine batter.
  • Divide batter evenly in muffin tin. There should be around 8 muffins.
  • Bake for 15-20 minutes, or until skewer inserted into muffin comes out clean.

Notes

Instead of chopping with kitchen scissors, you can alternatively, chop the prunes with a knife before combining with water. However, I prefer using scissors after the prunes have softened up a bit in water as otherwise the prunes are very sticky!
I use a non-stick muffin and do not grease before baking. If using a muffin tin that is not non-stick, consider greasing.
This recipe makes 8 standard sized muffins. If using a jumbo muffin tin, adjust baking time accordingly.
