Silken Tofu Salad with Black Sesame Sauce

An easy vegan salad with silken tofu and cucumber, perfect as a side dish during hot weather. This salad comes together in 5 minutes with minimal effort.

Ingredients

  • 1 block silken tofu
  • half long cucumber (around 1/2 cup) diced
  • 3-4 mini sweet peppers diced (optional)

Black Sesame Sauce

  • 2 tablespoons black sesame paste
  • 2 tablespoons vinegar
  • 2 tablespoons soy sauce
  • 1-2 teaspoons your favorite chili oil
  • 1-2 teaspoons or more water

Garnishes (optional)

  • Cilantro chopped
  • Spring onion sliced
  • More chili oil

Instructions

  • Whisk together all the ingredients under black sesame sauce. It should become a thick paste. Now adjust the consistency by whisking in some water, a little at a time, until the consistency is smooth and sauce-like.
  • Arrange the black sesame sauce, silken tofu, and diced cucumber (and peppers if using) on a plate.
  • Garnish with chopped cilantro and spring onion if desired. Drizzle with more chili oil. Serve immediately.
